Children have known for decades that there is something special about the chocolate / vanilla combination. Ever increasing consumption of Oreo cookies, Klondike bars and ice cream sandwiches prove it. As it turns out, chocolate and vanilla are in fact the only two flavors.

Scientists from the Culinary Institute of America have discovered this amazing fact.

It turns out that flavors are more complex than scientists previously imagined. The latest research shows that flavors are spectrum based in almost exactly the same way that light is.

In the most simplistic terms, black is the absence of color whereas white is all colors of the spectrum combined. The flavor spectrum is set up similarly. Chocolate is the combination of all flavors whereas vanilla is the absence of flavor.

Dr. Mile Swalker has been obsessed with the study of flavors ever since he was a boy. “Father always said there are only two flavors that count, salt and pepper. It seemed so simplistic to me, but it turns out Dad was onto something.”

Dualities in the world of flavor have long been studied by scientists, chefs and amateur flavorologists. ‘Salt and Pepper’ and ‘Peanut Butter and Jelly’ are two of the most common college level studies, but Chocolate and Vanilla tops the list.

“Year after year we come back to study it. It’s simply amazing that the number of new chocolate/vanilla combo products that are being produced each year by food manufacturers. We knew there had to be a reason. Now we know there is.” says Dr. Swalker.
